Almond Butter and Date Energy Bites

  • 3/4 cup rolled oats

  • 1/2 cup almond butter

  • 1/4 cup chia seeds

  • 6-8 medjool dates - pitted

  • 2 teaspoons maple syrup or honey

  • 1/4 cup shredded coconut - unsweetened

  • 1/2 cup Lily’s chocolate chips

  1. Pulse all the ingredients together in a food processor until they start to ball up, about 30 seconds.

  2. Pour the mixture out onto a baking sheet and start rolling into bite sized balls. Store in a plastic bag and keep them on the counter or the refrigerator!
