Apricot Olive Oil Cake

Ingredients:

  • 1 cup flour

  • 1 tablespoon baking powder

  • 4 eggs

  • 1/2 teaspoon salt

  • 1 1/2 cups sugar

  • 2/3 cup olive oil

  • 1/3 cup dried apricots finely chopped or diced in a food processor

  • 1 teaspoon vanilla bean paste or extract

  • 2 cups almond flour

Glaze:

  • 1 cup powdered sugar

  • 1-2 tablespoons lemon juice

Instructions:

  1. In a large bowl, beat together the eggs and salt until frothy- about 1 minute.

  2. Add the sugar and vanilla to the eggs and beat for another minute.

  3. Add the flour, baking powder, almond flour and olive oil to the egg mixture.

  4. Beat together just until combined.

  5. Add in the apricot and fold together using a spatula until incorporated.

  6. Pour the batter into three 6 inch cake pans or two 9 inch cake pans. Be sure sure to spray the pans with nonstick spray or butter and flour the pans.

  7. Bake at 350º for 45 minutes or until golden brown and the side of the cake have slightly pulled away from the sides.

  8. For the glaze, mix together the lemon juice and powdered sugar until smooth.

  9. Using a small spoon spoon the glaze over the cake when it is still warm. Serve with with a scoop of ice cream and enjoy!
