Corn and Tomato Salad with Mint and Feta Cheese

  • 4 ears of fresh corn (husked and cut off the cob)

  • 1 cup of cherry tomatoes - cut in half

  • 1 shallot - finely chopped

  • 1 tablespoon olive oil

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 1/4 cup chopped mint

  • 1/4 cup crumbled feta

Lime Vinaigrette

  • 1/4 cup olive oil

  • Juice of 1 lime

  • 1 tablespoon apple cider vinegar

  • 1/2 teaspoon red chili flakes

  • 2 teaspoons honey

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/2 teaspoon cumin

  1. In a saucepan, heat 1 tablespoon of olive oil on high heat for 2 minutes. Then add in the shallot and corn and allow it to cook on high heat for 6 minutes, moving it around enough but you want to get little char marks on the corn. Season with salt and pepper.

  2. After 6-7 minutes, take it off the heat and set aside.

Now make the vinaigrette!

  1. Simply mix all ingredients together with a whisk. Taste to see if it needs more salt!

  2. Once the vinaigrette is ready you can assemble your salad!

  3. In a large but pretty serving bowl, pour in the cooled corn and shallot, then add in the cherry tomatoes and mint. Pour the dressing over the salad and give it a good toss.

  4. Last step is to top the gorgeous salad with a little fresh crumbled feta!
