Herby White Beans and Toast

This salad works great as a dip for an appetizer or snack. It’s so simple and absolutely  delicious. 

ingredients:

2 cups cooked or drained canned white beans

¼ cup fresh dill

2 tablespoons fresh mint

1 green onion (white and green parts)

1 cloves garlic

Juice  of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon lemon zest

Sourdough  toast for dipping

Instructions:

  1. In a small food processor, blend dill, mint, garlic, lemon juice and olive oil. Blend for  30-45 seconds.

  2. Taste and season with about 1 teaspoon of salt and ½ teaspoon of  pepper.

  3. Add the herbed oil to the beans. 

  4. Mix together and serve in a large shallow bowl. Top with lemon zest and serve with sourdough  toast for dipping.
