Lamb Sliders with Tzatiki

Lamb Sliders with Tzatziki

  • 1 pound ground lamb

  • 1/2 red bell pepper finely chopped

  • 1/2 large shallot Finley chopped

  • 3 tablespoons garlic Finley chopped

  • 3 shakes of Worcestershire

  • 1 tablespoon freshly chopped dill

  • 1 tablespoon chopped mint

  • 2 tablespoons chopped Italian parsley

  • 1 Tsp of cumin

  • 2 tsp salt

  • 1 tsp pepper.

  • Olive oil

Tzatziki

  • 1 cup while milk greek yogurt- I liked the brand Face

  • 2 tsp chopped garlic

  • Juice of 1/2 a lemon

  • 1 tablespoon chopped dill

  • 1 tablespoon chopped mint

  • Salt to taste

  • Pepper to taste

  • Pinch of cumin

  1. First sauté the red bell pepper, shallot and garlic in a saucepan. Cook for 5 minutes with a little olive oil and salt and pepper to taste. You just want to take the raw edge off these ingredients so it incorporated into the meat seamlessly. Once the pepper, shallot and garlic have cooked for 5 minutes or so, turn off and let it cool down for 10 minutes. Then add into a large bowl with the ground lamb and all the other ingredients. Mix together until combined. Do not over mix the meat or it will become dense. Form into small patties, about 1 1/2 inches in diameter.

  2. Season each side with salt and pepper before searing on a griddle or cast iron skillet with a little olive oil in the pan, just enough to coat the pan. like my lamb burgers done medium and I find that 2 minutes on each side then 1 minute each side. Total of 3 minutes per side, give or take.

  3. My Favorite way to enjoy these sliders is on a on a mini brioche bun, my tzatziki and some sliced tomato. But feel free to experiment with sliced cucumbers, grilled eggplant, arugula or whatever you might personally love on your burger.

I like to make the Tzatziki first to let the flavors marry together before cooking the burgers. Just combine all ingredients in a bowl, cover and put in the refrigerator until you need it.
