Lemon Arugula Pasta

Ingredients:

1/2 pound or bag of pasta of choice. I like to use cavatappi or small tubed shaped pasta!

4 tablespoons butter

2 tablespoons olive oil

2 cloves of garlic - thinly sliced

1 tablespoon Calabrian chilies - more if you like it spicy! They now sell this at Trader Joe’s or any specialty Italian market.

1 teaspoon salt

1/2 teaspoon pepper

3/4 cup grated Parmesan cheese

Juice of 1 lemon

1 1/2 cups arugula

Instructions

  1. Bring a pot of water to a boil. Season with a large pinch of kosher salt. Add in your pasta and cook until al dente or recommended time according to the packaging.

  2. In another pot, add the olive oil, butter, garlic, Calabrian chilies and 1/2 teaspoon of the salt and pepper. Don’t turn the heat on until pasta is ready to transfer.

  3. When pasta is al dente, turn the pot with butter and olive oil on medium high heat for 30 seconds. Then add in the pasta directly from the pasta water to the saucepan. I like to use a spider to transfer the pasta!

  4. Stir the pasta with the sauce together quickly. Add in the Parmesan, lemon juice and arugula.

  5. Stir vigorously together with a few tablespoons of pasta water. This will create a silky sauce to coat the pasta.

  6. Give it a taste to see if you want to add more salt.
