The Beans

Ingredients:

2 15oz cans of Sun Vista black beans

2 poblano chilies - roasted and peeled and sliced into long strips

1/2 white onion thinly slices

3 cloves of garlic chopped

3/4 cup of shredded jack or pepperjack cheese

1/3 cup of sour cream

2 Teaspoons of Fiesta Blend

2 tablespoons olive oil

Instructions:

This recipe can easily be doubled or halved!

  1. First roast the poblano peppers over an open flame until totally charred and black. Then take them off the stove and wrap in a wet pepper towel and place into a ziplock bag and allow them to steam. After about 5 minutes or so take them out and the skins should very easily slide off!

  2. Heat olive oil in a skillet and then onions and sliced poblano chilies.

  3. Season with two teaspoons Fiesta Blend. Sauté on medium heat for 7 minutes or until onions become translucent.

  4. Add in the beans and their juices and chopped garlic.

  5. Allow beans to cook for 10 minutes before adding shredded cheese and sour cream.

  6. Stir in a few tablespoons of water if it looks a little thick.

  7. Serve with corn tortillas and toppings of choice!
