Marinated Onions

Teri Turner of No Crumbs Left is the mastermind for these marinated onions! She loves them and seems to put them on everything. And now I know why. Marinating them takes the raw edge off of the onions while also making them applicable to lots of different foods.They would be great on a sandwich, a salad, a Mediterranean bowl or even eggs in the morning! They take a dish from simple to complete and it is so, so, so easy!My recipe just has one more ingredient than Teri’s recipe and that is salt! Ha! Marinated Onions

  • 1 red onion-thinly sliced

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

  • 2 teaspoons salt

  • 2 teaspoons dried oregano

  1. Simply mix together the olive oil, red wine vinegar, salt and oregano together. Pour over the sliced red onions I a small bowl. Allow them to marinate for at least 2 hours before putting them on literally ANYTHING! I paired them with my falafel bowl last night for dinner!

  2. They keep for 4-5 days in the refrigerator!
